Mum’s Meatballs (Kjoftinja)

Mum’s special recipe is based on the traditional Macedonian version but with a few additions. You can make them any shape or size you like and there are no rules about how to eat them, my niece loves eating her kjofte with bbq sauce, while my husband prefers his on a hamburger with caramelized onions, fresh aioli (see mayonnaise recipe) and salad.

Baked Almonds (Pecheni Bademi)

Every Macedonian house serves nuts as meze alongside cheese, salami and salad.

I often bake almonds before guests arrive and serve while warm – the nutty aroma that fills the house makes it twice as hard for anyone to resist.

These rustic little gems are a taste sensation. They are by no means low in fat (fried and stuffed with cheese), but they certainly are a special treat, and in my opinion one of life’s pleasures.

Simple Cabbage Salad (Zelka Salata)

I just love this salad, it’s a Balkan classic which is super simple to make and tastes delicious. As tradition would have it, I have grown up watching my dad, dedo (grandfather) and uncle eat this salad with a shot of warm rakia (Macedonian spirit) while the women in my family prepared dinner.
